Baked Milk Yogurt
Popular in Slavic cuisine, baked milk yogurt is also known as Ryazhenka. Originally, baked milk was made in order to preserve the milk and to kill microbes that would turn it sour. Since refrigerators were not available, but ovens were always accessible, slowly baking the milk was a quick solution. The popularity of baked milk inspired baked milk yogurt, and many other ethnicities have since adapted their own variants to the baked milk.
